I love lettuce wraps because they feel like little sandwiches and you can fill them with whatever you like. Here I've done a favourite of mine but you can substitute the Turkey for your favourite sandwich fillings.
- 2 Large iceberg lettuce leaves
- 2 slices of roast turkey
- 2 slices of mozzarella
- 4 cherry tomatoes, sliced
- 1.5 tbsp pesto (try using Reset Pesto - recipe on the website)
- Salt and pepper to taste

Place all the ingredients inside 1 of the lettuce leaves, wrap tightly, and then place in the second lettuce leaf with the seam side down.

Wrap tightly again, cut in half, and enjoy like a sandwich
