If you’re like me, you love a Yorkshire pudding but don’t want to completely ruin your eating plan. Here is a lower carb version that definitely satisfies those cravings for me.

Ingredients
  • 1.5 tbsp butter
  • 2.5 tbsp arrowroot flour
  • 2.5 tbsp almond milk (or milk of choice)
  • 1 egg
  • Pinch of salt
Needed kitchenware
  • Cupcake tray
  • Bowl
Instructions

1.

Preheat your oven to 200c.

Divide 1 tbsp of butter between 4 holes in your cupcake tray.

Place in the oven for about 3 minutes so that the butter melts.

Meanwhile, mix together the arrowroot, milk, egg, salt and 1/2 tbsp melted butter.

Divide the mixture between the 4 holes with the hot butter and place immediately back in the oven.

Cook for about 20 minutes or until they have risen out of the tray and look puffed up.

Tip

Try not to open your oven during cooking because they might collapse. Maintenance, not for first 12 weeks
