Yogurt marinated chicken

Ingredients

  • 6 chicken thighs (boneless, skinless)
  • 1 tbsp lemon juice 
  • 170g greek yogurt 
  • 1 tbsp garlic, minced 
  • 1 tsp cumin
  • 1 tsp cayenne 
  • 1/2 tsp ginger 
  • Salt and pepper to taste 


Instructions

Step 1

Mix together the lemon juice, greek yogurt, garlic, cumin, cayenne and ginger.

Step 2

Coat the chicken thighs with the marinade in a ziplock bag or container. Marinade for minimum 30 minutes up to overnight.

Step 3

Heat a grill pan over medium high heat with a very light brushing of olive oil.

Step 4

Remove excess marinade and season chicken with salt and pepper.

Step 5

Grill flat for about 5-7 minutes each side, until cooked through and seared nicely. (You may need to do multiple batches)
