West African Grilled Beef Skewers

These skewers come together really quickly and are full of wonderful flavours from West Africa.
Ingredients
  • 350g beef, cut into small cubes 
  • 3 heaped tbsp peanut butter
  • 1 tbsp olive oil 
  • 1 tsp garlic, minced or crushed
  • 1 tsp ginger, grated or minced 
  • 1 tsp allspice
  • 1 tsp paprika 
  • 1/2 tsp mild chili powder (or hotter depending on preferences) 
  • 1/4 tsp crushed red chili flakes 
  • 1.5 tbsp tomato paste 
  • 1/2 onion, grated
  • Salt and pepper to taste 
  • Skewers (wooden or metal)

Instructions
1.
Mix all ingredients together and allow to marinate for minimum 30 mins.
2.
Thread meat onto skewers.
3.
Lightly brush a grill pan with olive oil, and then heat over medium high.
4.
Grill skewers for about 6 minutes each side, or until cooked to your liking.

Serve with salad or vegetables.
