This might sound crazy but cooking sweet potatoes in whipped egg whites makes them extra crispy and adds some protein. It’s a little extra work but I love them and it reduces the need for oil.

Preheat oven to 200c.

Place the oil on a baking tray (with grease proof paper or using a non stick tray) and place in the oven.

Whisk the egg whites using an electric mixer until they form stiff peaks (a few minutes, but be careful not to over beat. When you lift a spoon, they should hold in position).

Add in your seasonings to the egg whites and then your sweet potatoes. Quickly toss to combine.
5.
Add to the baking tray and roast for about 25mins, checking frequently, until your desired level of crispness.
