Ingredients
- 4 cooked chicken thighs or 2 cooked chicken breasts, sliced
- 1 cup cooked quinoa
- 1 head of little gem lettuce, sliced and torn
- 2 handfuls spinach
- 150g baby tomatoes, quartered
- 100g cooked broccolini, chopped
- 3 tbsp pesto (or vegan pesto)
- 1 tbsp sriracha or hot sauce (or more if you like spicy)
- Sprinkling of Parmesan (or vegan parmesan)
