Ingredients

  • 4 cooked chicken thighs or 2 cooked chicken breasts, sliced
  • 1 cup cooked quinoa 
  • 1 head of little gem lettuce, sliced and torn
  • 2 handfuls spinach
  • 150g baby tomatoes, quartered
  • 100g cooked broccolini, chopped 
  • 3 tbsp pesto (or vegan pesto)
  • 1 tbsp sriracha or hot sauce (or more if you like spicy) 
  • Sprinkling of Parmesan (or vegan parmesan)
