"Scones" with strawberries and cream

These are super easy oat flour "scone" alternatives with strawberries and cream! Perfect for summer!

  • 190g oat flour (make by grinding oats in a blender)
  • 1 tbsp baking powder
  • 180g Greek yogurt 
  • 1 tbsp vanilla extract
  • 3 tbsp maple syrup 
  • To serve: more greek yogurt and diced strawberries


Step 1

Preheat oven to 175c.

Step 2

In a bowl, mix together the oat flour and baking powder. Then mix in the greek yogurt, vanilla and maple until fully combined.

Step 3

Take a baking tray and add parchment paper.

Step 4

Create 6 balls from your "dough" and flatten slightly with your palm. (Wetting your hands makes the mixture easier to work with)

Step 5

Place in the oven for 12-15 minutes.

Step 6

Serve warm with strawberries and greek yogurt. Keep leftovers in an airtight container.
