Roasted ginger miso chicken

I love how simple this recipe is. Marinate and just pop it in the oven for a delicious dinner.

Ingredients
  • Skin on bone in chicken pieces ex 2 legs and 2 breasts 
  • 1 tbsp sesame oil
  • 1 tbsp grated ginger 
  • 1 garlic clove, minced 
  • 1 tbsp soy sauce 
  • 3 tbsp miso paste 
  • 1 tsp rice wine vinegar 
  • 3 spring onions, chopped

Instructions

1.

Mix all of the ingredients together and rub on the chicken. Marinate for 30 mins up to overnight.

Preheat oven to 180c.

Add your chicken to a baking pan and roast for about 45 minutes or when your chicken is cooked through.

Check after 20 mins and cover with foil if it starts getting too browned.
