A roast chicken is such a classic and so delicious! I love making a big one and using the leftovers for a salad the next day!

Preheat oven to 180c.

Mix together the olive oil, garlic, lemon zest, herbs, salt and pepper in a bowl.

Using your fingers, loosen the skin so it comes away from the chicken breast. If you can, rub half of the mixture under the skin and then the other half on top and ensure areas are well coated.

Chop the lemon in half and stuff in the cavity.

Place in the oven, breast side down on a tray in a roasting dish for about an hour.
6.
Remove from oven, and flip your chicken. Cook for about another 30 minutes until your chicken reaches the recommended internal temperature.
