Red Pepper Salmon

I had lots of red peppers in the fridge and thought why don't I make a sauce with it!

Ingredients
  • 4 salmon fillets or a large half side 
  • 3 red peppers, sliced and deseeded 
  • 1 tbsp olive oil
  • 1 small garlic clove 
  • Juice of half a lemon
  • Salt to taste

Instructions

1.

Preheat oven to 180c.

2.

Toss peppers in a tiny drizzle of olive oil and roast in the oven for about 25-30 mins.

3.

Place all the ingredients, other than the salmon, in the blender. Blend until smooth.

4.

Place the salmon on a baking tray and cover with the sauce. You will have extra sauce so save for later.

Place in the oven for 10-12 mins and then grill for another 3-5 mins.

Tip

You can use the extra sauce as a dip or for other proteins!
