Red Pepper Salmon
I had lots of red peppers in the fridge and thought why don't I make a sauce with it!

Ingredients
- 4 salmon fillets or a large half side
- 3 red peppers, sliced and deseeded
- 1 tbsp olive oil
- 1 small garlic clove
- Juice of half a lemon
- Salt to taste
Instructions
Step 1
Preheat oven to 180c.
Step 2
Toss peppers in a tiny drizzle of olive oil and roast in the oven for about 25-30 mins.
Step 3
Place all the ingredients, other than the salmon, in the blender. Blend until smooth.
Step 4
Place the salmon on a baking tray and cover with the sauce. You will have extra sauce so save for later.
Step 5
Place in the oven for 10-12 mins and then grill for another 3-5 mins.
