Asian Fusion
Pork meatballs with a coconut peanut sauce

This dish is full of Asian flavour with a twist on a peanut satay sauce.

Ingredients

Meatballs

  • 500g pork mince
  • 1 tbsp ginger, peeled and minced
  • 1 tsp garlic, minced
  • 1 egg
  • 1.5tbsp almond flour (ground almonds)
  • 1 tbsp sriracha 
  • 1 tbsp soy sauce 
  • Salt and white or black pepper to your taste 
  • 1 tbsp olive oil

Vegetables

  • 1 tbsp olive oil
  • 2 bell peppers, sliced
  • 250g sugar snap peas (or other green vegetable)

Sauce

  • 1/4 cup peanut butter
  • 100ml coconut milk 
  • 1/2 tsp garlic, minced
  • 1 tsp ginger, minced 
  • 1 tbsp soy sauce
  • 1 tbsp sriracha

Instructions

1.

Mix all the meatball ingredients other than the oil together.

Heat a large pan with 1tbsp olive oil over medium high heat. Roll into meatballs with your hands and add to the pan.

Cook for about 5-8 mins each side, until brown and cooked through.

Meanwhile, heat 1 tbsp olive oil in another pan over medium high heat, and stir fry the vegetables for about 5 mins or to your preferred doneness.

For the sauce, heat a small saucepan over medium low heat. Add the ingredients and stir.

Heat for a few minutes until fully combined. Add water in little amounts and whisk until you get your desired texture.

7.

Toss the vegetables in the sauce and then add your meatballs on top.

Drizzle more sauce over the top, and serve with extra spring onions and sesame seeds if desired.
