Peanut butter and jam bites

These are so simple to make and such an amazing little treat!

Ingredients

  • 150g raspberries
  • 1 tbsp water
  • 2 tbsp chia seeds
  • Unsweetened almond/peanut butterĀ 
  • 150g dark chocolate chipsĀ 

Instructions

Step 1

In a small saucepan, add the raspberries, water and chia seeds over medium heat.

Step 2

Allow to bubble and then reduce heat, stirring to mush the raspberries and incorporate it all together.

Step 3

Once you have a thick, jam like consistency, remove from heat and set aside.

Step 4

Once cool, spoon about a tablespoon worth of the "jam" onto parchment paper on a baking tray. Repeat to use all the jam to make little mounds.

Step 5

Add a small dollop of peanut butter on top of each jam mound.

Step 6

Refrigerate for about an hour.

Step 7

Melt your chocolate in the microwave, stirring every 20 seconds until fully melted.

Step 8

Dip each peanut butter jam mound in the chocolate and then return to the fridge.

Step 9

Remove from the fridge and enjoy!
