In a medium or large bowl, add your yogurt, ginger garlic paste, mustard oil, powders, spices and salt to taste. Whisk until everything is well combined.

Add in your lemon juice, chopped cilantro and mint. Mix it well.

Stir in your paneer cubes and veggies, mix until they are well coated in the marinade.

Cover the bowl and refrigerate for a minimum of 1 hour. You can leave it overnight as well.

After it is done marinating, grab your skewers and start arranging your paneer cubes, tomatoes, bell peppers and onions, alternating with each other. Pre-heat your oven to 180c.

Arrange all the prepared skewers on a tray lined with baking paper, spray them with a bit of oil and bake for 8-10mins and then turn on the broil. Broil for 2-3mins or until the paneer cubes look a little charred. If you are using a pan, cook each side until they are charred.

Remove from the pan or oven and serve with a sprinkle of chopped coriander, chaat masala or lemon juice.
