This traditional Pumpkin Halwa, also known as "Petha Ka Halwa" is a fall and winter classic in the Punjab region of Pakistan.

Add the grated pumpkin, cardamom powder and whole milk to a pot or pan. Heat over a high heat, stirring often until the mixture becomes semi dry,

Add in the honey. Continue to stir and dry out the mixture over a high heat until it begins to look dry again.

Add the ghee in. Continue to cook over a high heat, stirring often. The mixture will turn to a glossy, dark shade of orange.

Keep stirring the mixture until it begins to pull away from the pan and has the consistency of pudding.

Garnish with cashews and serve warm.
