Mediterranean lemon whole baked fish

A recipe inspired by my birthday trip to Greece! I love the simplicity of this dish!

Ingredients

  • About 1.2kg sea bass or other white fish
  • Salt and pepper
  • 1 lemon, sliced
  • 1 red onion, sliced
  • 1 tbsp olive oil 
  • 3 cups rocket 

Dressing 

  • 1 lemon, juices
  • 3 tbsp olive oil
  • 1 clove pressed garlic
  • Salt and pepper 

Instructions

Step 1

Preheat oven to 200c

Step 2

Pat your fish dry and then make a few cuts across the skin

Step 3

Season with salt and pepper, rubbing it all over, including in the slits and the cavity

Step 4

Add the onions and lemon slices in the cavity, slits and around the fish

Step 5

Place in the oven for about 20minutes, you may want to broil/grill for the last few minutes to get a crispy skin

Step 6

Meanwhile, mix together the dressing ingredients

Step 7

Place the rocket on the plate, add your fish and then drizzle with your dressing
