A quick and simple weeknight dinner!

Preheat oven to 180c

Add the leeks to the bottom of an ovenproof dish

Season the chicken with salt and pepper.

Heat a large pan over medium high heat with the olive oil. Once hot, add the chicken and brown both sides.

Add the chicken on top of the leeks. Then add the garlic and lemon zest to the pan. Cook for a couple of minutes, stirring to avoid sticking.
6.
Add the lemon juice and chicken stock. Use the liquids to deglaze and bring to a light boil.
7.
Pour everything in the pan over the chicken.
8.
Pop in the oven for about 20 minutes.
