Lamb Shanks
This is such a great dinner for a date night at home or a special meal with the family. It is so tender and delicious, and can be served alone or with cauliflower mash.

Classic Dishes
Ingredients
- 2 lamb shanks
- Salt and pepper
- Olive oil
- 1 onion chopped
- 2 carrots chopped (optional)
- 2 cloves garlic minced
- ½ cup broccoli chopped
- ½ cup green beans chopped
- 1 tbsp tomato paste
- 1 can chopped tomatoes
- 2 cups beef stock
- Rosemary and Thyme
Instructions
Step 1
Preheat your oven to 160°C.
Step 2
Season your lamb with salt and pepper. Heat a large drizzle of olive oil (1½ tbsp) in a large pot or dutch oven over medium high heat.
Step 3
Brown the lamb on both sides and then remove to a plate.
Step 4
Add the onion, carrots and garlic and cook until the onions are soft and translucent, about 4 minutes.
Step 5
Add the other vegetables and tomato paste and stir.
Step 6
Add the can of tomatoes, beef stock and herbs to the pot.
Step 7
Add the lamb back in, bring to a boil, and then cover and place in the oven. Cook for about 2 hours.
Step 8
Remove from oven and transfer the meat and vegetables to a plate.
Step 9
Keep the liquid in the pot and bring to a boil to reduce.
Step 10
Add the reduced sauce to the plate.
