Italian Wedding Soup

Ingredients

Meatballs

  • 500g chicken or Turkey mince 
  • 1 egg 
  • 1/4 cup Parmesan, finely grated 
  • 1 tbsp chopped parsley 
  • 2 tsp garlic powder 
  • 1/4 cup almond flour or flaxseed 
  • Salt and pepper 
  • 1 tbsp olive oil 

Soup

  • 1 tbsp olive oil
  • 2 carrots, diced (optional)
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1/2 tsp Italian herbs 
  • 1/4 tsp red chili flakes 
  • 1litre chicken stock 
  • 1/4 cup quinoa 
  • 2 cups spinach 
  • Salt and pepper to taste 
  • Parmesan to sprinkle on top 


Instructions

Step 1

Mix all of the meatball ingredients except the olive oil together in a bowl until combined. Using your hands, create small round balls out of the mixture.

Step 2

Heat the 1 tbsp olive oil in a large pan over medium high heat. Once hot, sear the meatballs for about 2 minutes each side, when they should be browned. Set aside. Use multiple batches if necessary.

Step 3

In a large, deep pan, heat 1 tbsp olive oil over medium high heat. Once hot, add the onions, garlic and carrots.

Step 4

Season with Italian herbs and red chilli flakes. Add the chicken stock and bring to a boil.

Step 5

Add in the quinoa and meatballs, and allow to simmer for about 15 minutes.

Step 6

Stir in the spinach. Serve with a sprinkling of parmesan!
