Harissa roasted cauliflower with yogurt tahini sauce

A quick and simple recipe that is packed with flavours and texture.
Ingredients
  • 1 cauliflower, cut into florets 
  • 1 tbsp olive oil
  • 3 tbsp harissa
  • 1 tsp cumin
  • 1/4 tsp paprika
  • 1/4 tsp cinnamon
  • 3 heaped tbsp tahini
  • 3 heaped tbsp Greek yogurt
  • Juice of 1/2 lemon 
  • 1/2 tsp garlic powder 
  • Salt and pepper to taste 
  • Parsley and optional 1 tbsp pomegranate seeds for serving

Instructions
1.
Preheat oven to 180c.
2.
Toss the cauliflower with olive oil, harissa, cumin, paprika and cinnamon.
3.
Roast in oven for about 25 mins, flipping halfway through.
4.
Mix all other ingredients together for sauce.
5.
Serve roasted cauliflower with sauce, parsley and optional pomegranate seeds.
