Grilled aubergine with tomato basil salad

This is such an easy and fresh salad which looks impressive on a table.
Ingredients
  • 1 aubergine, cut into slices about 1cm thick
  • About 200g cherry tomatoes, quartered
  • 1 handful basil, chopped or torn 
  • Juice of 1/2 lemon
  • 3 tbsp olive oil 
  • Salt and pepper to taste

Instructions
1.
Lightly brush aubergine with a little olive oil and season with salt and pepper.
2.
Heat a grill pan over medium high heat and add aubergine.
3.
Grill until tender, about 5 mins each side.
4.
Mix together juice of 1/2 lemon, 3 tbsp olive oil and salt and pepper.
5.
Toss the basil and tomatoes with the lemon olive oil dressing and serve over the aubergine.
