Lightly brush aubergine with a little olive oil and season with salt and pepper.

Heat a grill pan over medium high heat and add aubergine.

Grill until tender, about 5 mins each side.

Mix together juice of 1/2 lemon, 3 tbsp olive oil and salt and pepper.
5.
Toss the basil and tomatoes with the lemon olive oil dressing and serve over the aubergine.
