Greens with bacon

Based on a traditional holiday dish using collard greens in the US South, this side is so comforting and delicious. Perfect for winter and the holidays!

Ingredients
  • 1 tsp olive oil
  • 1 packet of lean bacon, chopped into small pieces and fat removed
  • 1 shallot, finely sliced
  • 2 garlic cloves, finely sliced 
  • 1/2 tsp red pepper flakes (more or less to taste) 
  • 1/4 cup apple cider vinegar 
  • 1 cup chicken stock 
  • 2 small heads of spring greens, sliced 
  • 200g cavolo nero or kale, destemmed and chopped

Instructions

1.

Heat a large pot over medium high heat with the oil.

Add bacon and cook for a couple of minutes until cooked through.

Reduce temperature to medium. Add in the shallot and cook for another minute or too.

Then add garlic and cook for one more minute.

Next, add in your red pepper flakes and apple cider vinegar and cook, stirring to deglaze, for about 2 mins.

Add in the stock and vegetables, and mix to combine.

Add the lid and simmer for about 10 mins.
