Garlicky Lime Quinoa

The quinoa from the lime coconut chicken was so good that I had to share the recipe as a side as well!

Ingredients
  • 1/2 cup quinoa
  • 1 cup water
  • Salt
  • 1 tbsp garlic, minced using a garlic press
  • Juice of 1 lime

Instructions

1.

Rinse the dry quinoa.

2.

Place in pot with water, garlic and a heavy sprinkling of salt.

3.

Boil and then reduce to a simmer for about 20 minutes, when the quinoa will be fluffy and the water has evaporated.

Add the lime juice and stir to combine.
