A delicious treat for the holidays full of festive spice! This one bowl recipe is full of seasonal ingredients whilst also being grain free and refined sugar free. Our star ingredient - pumpkin - is a low calorie, nutrient rich food, which also contains lots of health benefits including being high in beta carotene. I hope this recipe fills you with wholesome festive holiday joy!

Ingredients
  • 75g or 1/3 cup butter, melted
  • 260g or 1 cup pumpkin purée 
  • 2 eggs
  • 80g or 1/4 cup Greek yogurt 
  • 4 tbsp maple syrup 
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar 
  • 190g or 2 cups ground almonds or almond flour
  • 1 tsp baking soda 
  • 2 tsp cinnamon 
  • 1 tsp ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp all spice 
  • Pumpkin seeds (to sprinkle on top)

Instructions

Preheat oven to 170c.

Mix together the melted butter, pumpkin purée, eggs, greek yogurt, maple syrup, vanilla extract, and apple cider vinegar.

Slowly add in the almond flour, mixing to combine.

Add in the baking soda and spices and mix to combine.

5.

Add to a loaf pan and sprinkle with pumpkin seeds.

Bake for about an hour, when firm and not wiggly.
