Festive Pumpkin bread
A delicious treat for the holidays full of festive spice! This one bowl recipe is full of seasonal ingredients whilst also being grain free and refined sugar free. Our star ingredient - pumpkin - is a low calorie, nutrient rich food, which also contains lots of health benefits including being high in beta carotene. Ingredients
- 75g or 1/3 cup butter, melted
- 260g or 1 cup pumpkin purée
- 2 eggs
- 80g or 1/4 cup Greek yogurt
- 4 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tsp apple cider vinegar
- 190g or 2 cups ground almonds or almond flour
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 tsp ginger
- 1/2 tsp nutmeg
- 1/2 tsp all spice
- Pumpkin seeds (to sprinkle on top)
Instructions
Step 1
Preheat oven to 170c.
Step 2
Mix together the melted butter, pumpkin purée, eggs, greek yogurt, maple syrup, vanilla extract, and apple cider vinegar.
Step 3
Slowly add in the almond flour, mixing to combine.
Step 4
Add in the baking soda and spices and mix to combine.
Step 5
Add to a loaf pan and sprinkle with pumpkin seeds.
Step 6
Bake for about an hour, when firm and not wiggly.
