Festive Pumpkin bread

A delicious treat for the holidays full of festive spice! This one bowl recipe is full of seasonal ingredients whilst also being grain free and refined sugar free. Our star ingredient - pumpkin - is a low calorie, nutrient rich food, which also contains lots of health benefits including being high in beta carotene.   • 75g or 1/3 cup butter, melted
  • 260g or 1 cup pumpkin purée 
  • 2 eggs
  • 80g or 1/4 cup Greek yogurt 
  • 4 tbsp maple syrup 
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar 
  • 190g or 2 cups ground almonds or almond flour
  • 1 tsp baking soda 
  • 2 tsp cinnamon 
  • 1 tsp ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp all spice 
  • Pumpkin seeds (to sprinkle on top)


Step 1

Preheat oven to 170c.

Step 2

Mix together the melted butter, pumpkin purée, eggs, greek yogurt, maple syrup, vanilla extract, and apple cider vinegar.

Step 3

Slowly add in the almond flour, mixing to combine.

Step 4

Add in the baking soda and spices and mix to combine.

Step 5

Add to a loaf pan and sprinkle with pumpkin seeds.

Step 6

Bake for about an hour, when firm and not wiggly.
