Bitter Melon is a vegetable rich in vitamins and fibre and when combined with eggs, this dish makes a lovely addition to your meal!
1.
Wash bitter melon, pat dry, cut off stem & cut into half lengthwise. Remove the soft pulp & seeds from the centre of the bitter melon

Lay flat surface of bitter melon on chopping board and cut both halves of the bitter melon into thin slices and set aside

Peel onion skin and slice onion into half. Lay cut surface of onion on chopping board and slice both halves of onion into thin slices and set aside

Break eggs into a mixing bowl and lightly beat eggs with a fork until yolks and egg whites are combined, about 10 seconds. Add Himalayan sea salt & pepper to egg mixture

Heat the frying pan on medium heat for 1 minute. Add 2 tbsp olive oil to the frying pan and heat for another 30 seconds or until the oil starts to lightly smoke. Add sliced onion and fry for 1 minute on medium heat, occasionally stirring the onion so it doesn’t burn

Add garlic and fry for another 30 seconds, again stirring to ensure onion and garlic don’t burn. Add sliced bitter melon to frying pan and continue to fry for another minute, always stirring and turning over the contents to evenly cook

Turn off fire and scoop all ingredients into egg mixture and mix well

Reheat the frying pan on medium heat for 1 minute and add remaining 1 tbsp olive oil to the frying pan. Keep fire on medium heat and heat oil for 30 seconds or until the oil starts to smoke a little. Pour egg mixture with bitter melon, onion & garlic into frying pan and swivel the frying pan so egg mixture spreads out to the edge

Using spatula, evenly spread onion and bitter melon throughout the egg mixture. Do not over stir egg mixture. Let egg mixture cook, unstirred for 1 – 1 1/2 minutes until underside of omelette turns light brown

Using a spatula, gently loosen the omelette from the edge of the frying pan, moving the spatula to the centre of the omelette, making sure the omelette is kept whole. To flip omelette, carefully place dinner plate upside down on top of frying pan and flip frying pan upside down

Replace omelette into frying pan to cook the other side of omelette on medium heat for another 1 minute or until underside of omelette turns light brown
12.
Turn off heat. Carefully place the dinner plate upside down on the frying pan and flip the frying pan upside down to remove the omelette onto the dinner plate. Serve omelette immediately
Tip
For less bitterness, select the bitter melon with wider ridges.
