Cod baked in foil with ginger and spring onion
This recipe is so easy, no clean up, and fast that it feels like it should be illegal!

Ingredients
- 2 cups of your favourite green vegetables (I used half sugar snap peas, half broccoli
- 2 cod filets (or other white fish)
- 2 garlic cloves, minced
- 1 inch piece of ginger, sliced into thin rounds
- 4 spring onions, sliced into thin strips
- 2 tbsp soy sauce
- 1 tbsp rice wine vinegar (or mirin)
- 1 tbsp fish sauce (optional - found in the japanese section of the supermarket)
Instructions
Step 1
Preheat oven to 200c.
Step 2
Take two large pieces of foil (large enough to enclose all of your items to make two wrapped parcels).
Step 3
Place your vegetables in the middle of each piece of foil, diving equally.
Step 4
Add the fish on top of the vegetables of each piece of foil.
Step 5
Add the ginger, garlic and spring onions on top of each piece of fish.
Step 6
Drizzle the liquid ingredients over the top. Wrap the fish with the foil like a present, closing up the top and sides so you have two parcels.
Step 7
Place on a baking sheet and cook for about 20 minutes.
Step 8
Open your parcels and enjoy!
