Cod baked in foil with ginger and spring onion

This recipe is so easy, no clean up, and fast that it feels like it should be illegal!

Ingredients
  • 2 cups of your favourite green vegetables (I used half sugar snap peas, half broccoli 
  • 2 cod filets (or other white fish)
  • 2 garlic cloves, minced 
  • 1 inch piece of ginger, sliced into thin rounds 
  • 4 spring onions, sliced into thin strips 
  • 2 tbsp soy sauce 
  • 1 tbsp rice wine vinegar (or mirin)
  • 1 tbsp fish sauce (optional - found in the japanese section of the supermarket)

Instructions

1.

Preheat oven to 200c.

Take two large pieces of foil (large enough to enclose all of your items to make two wrapped parcels).

3.

Place your vegetables in the middle of each piece of foil, diving equally.

4.

Add the fish on top of the vegetables of each piece of foil.

5.

Add the ginger, garlic and spring onions on top of each piece of fish.

6.

Drizzle the liquid ingredients over the top. Wrap the fish with the foil like a present, closing up the top and sides so you have two parcels.

7.

Place on a baking sheet and cook for about 20 minutes.

Open your parcels and enjoy!
