Chopped Salad with Chicken

I absolutely love variations on the classic chopped salad and it's such a fun way to get creative and allow the family to get involved.

  • 2 cooked chicken breasts, chopped 
  • 1/3 cup chopped cooked bacon pieces 
  • 4 cups chopped romaine lettuce 
  • 1/2 cup chopped cherry tomatoes 
  • 1 small avocado, chopped 
  • 3 tbsp olive oil
  • 3 tbsp apple cider vinegar (with the mother if available)
  • 1 tsp Dijon mustard 
  • Sprinkle of garlic powder 
  • Salt and pepper to taste 
  • Other options for yourself or for your family or guests could include chopped red onion, cheese, peppers, chickpeas, egg, cucumber etc. I had mine like the example, but my husband didn’t want it like that, so I removed the tomatoes and avocado for his and changed it for onion and cheese)


Step 1

Chop your chosen ingredients and then arrange around a bowl.

Step 2

Mix your dressing of olive oil, apple cider vinegar, mustard, garlic and season with salt and pepper.

Step 3

Drizzle dressing over your salad and toss to combine.
