Chinese style poached chicken

I’m going to admit that this is not the most attractive looking meal you can eat, but it is a staple in our household. It’s really simple to make and full of healthy ingredients.

Ingredients
  • Whole chicken 
  • 1 bunch of spring onions 
  • 6cm of ginger, peeled and cut into large strips
  • 1 chicken stock cube (low sodium if possible) 
  • 1 Chinese leaf, chopped into slices (you could substitute cabbage)
  • 2 tbsp grated ginger
  • 2 tbsp sriracha or hot sauce 
  • 2 tbsp olive oil or sesame oil 
  • 1 tbsp soy sauce

Add the chicken to a large pot with the spring onions, ginger and stock cube.

Cover with water and then bring to a boil.

Immediately reduce to a simmer. Cover and allow to simmer for about 45 mins or until the chicken is cooked.

Remove chicken from the stock and set aside.

Add in the Chinese leaf to the stock and cook for about 5 minutes.

To make sauce, mix the ginger, sriracha, oil and soy sauce together.

Chop chicken and serve with the vegetables, soup, and sauce. Serve with white pepper if you like.

Serve with additional vegetables and optional brown rice.
