Chickpea chocolate chip cookie bars

Makes about 16 bars

Here is a healthier treat with extra protein and fibre from the chickpeas

Ingredients
  • 1 can chickpeas, drained
  • 1/4 cup creamy peanut or almond butter
  • 1/4 cup unsweetened yogurt 
  • 1/2 cup maple syrup
  • 1/4 cup almond flour 
  • 2 tsp vanilla 
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips

Instructions

1.

Preheat oven to 160c.

Add all ingredients other than chocolate chips to a food processor and mix until combined and smooth. If needed, add some water or more yogurt.

3.

Stir in chocolate chips and then spread into a 9 x 9inch brownie baking tin.

Bake for about 25 minutes.
