A super creamy and cheesy chicken that tastes so indulgent.

In a large pan, add the olive oil and then the onions on a low heat.

Cook, stirring frequently to avoid sticking, until caramalized - about 20 minutes.

Preheat oven to 180c.

Add in the spinach and cook until fully wilted.

Mix the spinach and onions into the cream cheese until combined. Season to taste.

Butterfly your chicken by slicing the breasts down the long side to make a pocket or sandwich. Make sure not to cut all the way through, you just want a pocket.

Add the cream cheese mixture into the inside and close up the chicken so it’s like a sandwich.

Add extra mixture on the top of the breasts.

Cook for about 35-40 mins.
