Cheesy pesto chicken

This recipe reminds me of pizza and I love anything that reminds me of pizza!

  • 1.5 tbsp olive oil
  • 4 chicken breasts 
  • Salt and pepper
  • 4 tbsp pesto (or vegan pesto)
  • 6 tbsp mozzarella 
  • About 300g vegetables (I used asparagus and broccoli) 
  • About 200g baby tomatoes 
  • 1/2 cup torn basil 
  • 1 tsp garlic powder or granules 
  • 4-6 tbsp balsamic vinegar 
  • (4 more tbsp mozzarella if you like to go on top) 


Step 1

Preheat oven to 200c.

Step 2

Butterfly the chicken by cutting it longways and opening it up to get one thin piece.

Step 3

Spread the pesto and cheese and then close the chicken back up like a sandwich.

Step 4

Season with salt and pepper.

Step 5

Using an oven safe pan, heat the olive oil over medium high and then add the chicken breasts. Cook for about 5 mins.

Step 6

Add in all the other ingredients and allow to cook for another couple of minutes.

Step 7

Throw it in the oven for about 12 minutes until chicken is cooked through.
