Caeser salad with crispy chickpeas

Ingredients
- 4 cups of your favourite salad leaves
- 1/2 cup grated Parmesan to top (substitute for a vegan alternative)
- 1 tbsp olive oil
- 1/2 cup chickpeas
- 1/2 tsp paprika
- 1/2 tsp garlic powder
Dressing
- 3 tbsp mayonnaise (vegan if preferred)
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp Worcestershire sauce
- 1/2 tsp garlic powder
- Salt and pepper
- 2 tbsp Parmesan (omit for vegan)
Instructions
Step 1
Heat 1 tbsp olive oil in a pan over medium high heat.
Step 2
Add the chickpeas, paprika and garlic powder. Cook for about 5 minutes when they should be crispy.
Step 3
Combine all the dressing ingredients together.
Step 4
In a large bowl, toss the salad leaves, parmesan (if using), chickpeas, and dressing.
