Caeser salad with crispy chickpeas

Ingredients

  • 4 cups of your favourite salad leaves 
  • 1/2 cup grated Parmesan to top (substitute for a vegan alternative)
  • 1 tbsp olive oil
  • 1/2 cup chickpeas
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder 

Dressing

  • 3 tbsp mayonnaise (vegan if preferred) 
  • 1 tbsp lemon juice 
  • 1 tsp Dijon mustard 
  • 1/2 tsp Worcestershire sauce 
  • 1/2 tsp garlic powder 
  • Salt and pepper 
  • 2 tbsp Parmesan (omit for vegan)


Instructions

Step 1

Heat 1 tbsp olive oil in a pan over medium high heat.

Step 2

Add the chickpeas, paprika and garlic powder. Cook for about 5 minutes when they should be crispy.

Step 3

Combine all the dressing ingredients together.

Step 4

In a large bowl, toss the salad leaves, parmesan (if using), chickpeas, and dressing.
