A delicious braised brisket that is easy to prep and makes for amazing leftovers.

Preheat oven to 160c.

In a large and deep pan, heat the olive oil over medium.

Add onions and cook, stirring occasionally for about 10 minutes.

Add the garlic and cook for another couple of minutes, until fragrant.
5.
Add the tomato paste and cook and stir for another minute.
6.
Add the stock and can of tomatoes. Mix to combine and allow to come to a low boil.

Mix all the seasonings together in a small bowl and rub all over your brisket.

Place brisket with seasonings in your pan and add the bay leaf.
9.
Cover with lid or foil and place in the oven until the internal temperature is about 93c (about 1.5 hours per kg).
10.
Remove the brisket and then slice.
11.
Put the sauce back on the hob over medium high heat. Allow to reduce until your desired consistency.
12.
Serve brisket with your sauce and vegetables.
Tip
This can be made a day or two ahead of time, and also makes great leftovers.
