Boiled gammon and cabbage
This is a traditional Irish dish that my mum used to make for me when I was growing up. I love the simplicity and flavours that are so comforting.

Classic Dishes
Ingredients
- About 2kg unsmoked gammon joint
- 1 spring or savoy cabbage, chopped
- 2 leeks, chopped
- Black pepper
Instructions
Step 1
Place your gammon joint, fat side up, in a large pot. Fill with water to cover
Step 2
Bring to a boil. If a lot of white froth appears, discard and refill with water and boil again
Step 3
Reduce to a simmer
Step 4
Add in the chopped vegetables. Cover and allow to cook for about 1.5 hours
Step 5
Drain the liquid and then carve your gammon
Step 6
Serve your gammon and vegetables with black pepper.
