Blueberry cobbler

This is one of my absolute favourite dessert recipes!
Ingredients
  • 350g blueberries 
  • Zest and juice of 1 lemon 
  • 180g oat flour
  • 1.5 tsp baking powder 
  • Either 4 tbsp coconut sugar or maple syrup 
  • 50g butter (cold and cut into little chunks) 
  • 60ml water (add more as needed) 
  • 1.5 tsp vanilla extract

Instructions
1.
Preheat oven to 180c.

Mix blueberries and lemon and place in the bottom of an oven safe dish.
3.
Mix together the oat flour, baking powder and coconut sugar or maple.
4.
Add the butter pieces and use your fingertips to combine until you can’t feel any butter pieces anymore.
5.
Add the water and vanilla and stir to combine.
6.
Dollop the oat mixture on top of the blueberries.

Bake for about 45 minutes.

Tip
Tip - you can make oat flour by blending oats in a blender
