Blueberry cobbler
This is one of my absolute favourite dessert recipes!

Classic Dishes
Ingredients
- 350g blueberries
- Zest and juice of 1 lemon
- 180g oat flour
- 1.5 tsp baking powder
- Either 4 tbsp coconut sugar or maple syrup
- 50g butter (cold and cut into little chunks)
- 60ml water (add more as needed)
- 1.5 tsp vanilla extract
Instructions
Step 1
Preheat oven to 180c.
Step 2
Mix blueberries and lemon and place in the bottom of an oven safe dish.
Step 3
Mix together the oat flour, baking powder and coconut sugar or maple.
Step 4
Add the butter pieces and use your fingertips to combine until you can’t feel any butter pieces anymore.
Step 5
Add the water and vanilla and stir to combine.
Step 6
Dollop the oat mixture on top of the blueberries.
Step 7
Bake for about 45 minutes.
