Bittergourd Omelette

Bittergourd may seem very intimidating because of how bitter it can be. But when done right, it is very delicious

Ingredients
  • 80g bittergourd
  • 5g salt
  • 1 tbsp of oil + 2 tsp of oil
  • 3 eggs
  • 5g soy sauce
  • Chia seeds, coriander leaves, onion (for garnish)

Instructions

1.

Deseed the bittergourd by slicing it in half and use the back of a spoon to scrape out the seeds. Then cut it into thin rings.

Place into a bowl and add 5g of salt to the bittergourd to remove the water from the bittergourd which makes it bitter. Let it sit for 30 minutes and then wash it thoroughly to remove the salt

Place 2 tsp of oil in a pan and heat up on high heat for 30 seconds. Add the bittergourd into the pan and let it fry for 3 minutes. It should get some colour. Then set aside.

In another bowl, mix 3 eggs together with 5g of soy sauce and beat the eggs vigorously.

Place 1 tbsp of oil into the pan and heat it up on high heat for 30s. When the pan is smoking hot, add in the egg mixture. From here, you need to work fast because the egg will cook very fast. Once the egg is slightly cooked, add in the bittergourd then use your spatula to mix the egg with the bittergourd gently. Once the eggs are still slightly watery, it can be removed from the pan and served.

Garnish with chia seeds, coriander leaves and onion slices

Tip

Make sure to use a pan that’s large enough when making the omelette. This allows more surface area contact with heat which makes the omelette taste better
