Berry granola yogurt pot

A simple healthy homemade granola pot! Easy to prepare in advance!

Ingredients
  • 1/2 cup oats
  • 3 tbsp mixed seeds (inc pumpkin and chia)
  • 2 tbsp plain peanut butter
  • 1 tsp butter 
  • 1/2 tsp vanilla extract 
  • 1/2 tsp honey (optional) 
  • 1/2 cup berries
  • 1 cup plain coconut yogurt or Greek yogurt

Instructions

1.

Preheat oven to 160c.

Melt the peanut butter and butter together, stirring often. (Either gently in a saucepan or in a microwave using 15 second intervals)

Mix in the vanilla extract and honey (if using) then mix together with the seeds and oats.

4.

Lay the mixture flat on a baking tray and bake for about 15-20 mins when browned and smelling delicious.

5.

In the meantime, mush your berries together with a fork to make a chunky berry puree.

Add layers of yogurt and berry purée and top with the granola
