Balsamic brussels sprouts with pomegranate

A delicious way to serve brussels sprouts that even my sprout hating mother liked.

Ingredients
  • 500g brussels sprouts, halved
  • 2 tbsp olive oil 
  • 1 tbsp balsamic vinegar 
  • Salt and pepper 
  • 1/4 cup pine nuts, toasted 
  • 1/2 cup pomegranate arils 
  • 1 tsp Balsamic glaze, for serving

Instructions

1.

Preheat oven to 180c.

Toss the sprouts in the olive oil, balsamic, salt and pepper.

3.

Bake for about 20 minutes, then add the pine nuts and bake for another 5 minutes.

Add pomegranate to serve and then a light drizzle of balsamic glaze, if desired.
