Eating apple crumble takes me right back to my Mum's home cooking as a child. It's such a delicious and indulgent dessert, and this is a much lighter version of this classic English dish with extra fibre to counteract those pesky carbs.

Ingredients

For the fruit mixture:

  • 6 apples cored and sliced into 1cm slices
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 2 tsp cinnamon
  • ¼ tsp ginger
  • ¼ tsp all spice
  • 1 tbsp arrowroot flour (or tapioca flour, usually found near baking soda)

For the crumble:

  • ¾ cup oats
  • ¼ cup almond flour
  • 1 tbsp flaxseed
  • 1 tsp cinnamon
  • 1 ½ tbsp butter, melted
  • 2 tbsp maple syrup
Needed kitchenware
  • Baking dish
  • Bowl with lid (or an additional plate)
