A quick and simple that was inspired by a delicious potato dish I had at an Indian restaurant.

Toss the butternut squash in the olive oil, 1/4 tsp garam masala and 1/4 tsp cumin.

Season with salt and pepper to taste.

Place in an air fryer for about 20 mins at 190c. Toss them about halfway through.

Mix together the yogurt and remaining spices.
5.
Serve butternut squash with yogurt, topping it with the seeds.

Tip
If you don't have an air fryer, roast your squash in the oven at 180c for about 25 mins.
