Air fryer Indian Spiced Butternut Squash with Yogurt

A quick and simple that was inspired by a delicious potato dish I had at an Indian restaurant.

    • 350g butternut squash, chopped
    • 1 tbsp olive oil
    • 1/4 tsp garam masala 
    • 1/4 tsp cumin
    • Salt and pepper to taste
    • 100g Greek yogurt 
    • Salt to taste 
    • 1/4 tsp cumin
    • 1/4 tsp garam masala 
    • 1/4 tsp garlic powder 
    • 1/4 tsp mild chili powder (more/less depending on your spice preference)
    • 1 heaped tbsp pumpkin seeds 
    • 1 tbsp pomegranate seeds


Step 1

Toss the butternut squash in the olive oil, 1/4 tsp garam masala and 1/4 tsp cumin.

Step 2

Season with salt and pepper to taste.

Step 3

Place in an air fryer for about 20 mins at 190c. Toss them about halfway through.

Step 4

Mix together the yogurt and remaining spices.

Step 5

Serve butternut squash with yogurt, topping it with the seeds.
