A delicious recipe combining sweet peppers with a flavoursome protein filling. This makes for a great dish to serve as a main course or side.

In a large bowl combine all the ingredients except for the peppers. Mix well by hand. Cover it and place in the fridge for at least half an hour.

In the meantime cut in half the peppers and remove the seeds.

Fill the peppers with the stuffing mix and place them in an oven tray covered with baking paper. Sprinkle the top of each pepper with parmesan.

Preheat the oven at 338°F (170°C).

Cook the peppers for 20/30 min without burning them.

Serve them hot or let them rest for an even creamy texture. Enjoy it!
