Silky, wobbly soft tofu, gently warmed and topped with a savoury soy sauce, golden crispy shallots and fresh spring onion. It's a simple, comforting dish that's ready in 15 minutes. Tofu provides plenty of plant protein and calcium. Serve it with steamed greens and edamame for a filling, balanced meal.
A non-stick frying pan (or an air fryer), and a steamer or microwave.

Heat the oil in the frying pan over a low-medium heat. Add the shallots and cook, stirring often, until golden and crisp-edged (8–10 minutes). Watch closely at the end, as they turn from golden to burnt quickly. Tip onto kitchen paper.

Meanwhile, carefully turn each block of tofu out onto a heatproof plate. Steam until warmed through (5–6 minutes), or cover and microwave on medium (2–3 minutes). Pour off any liquid.

Mix the light soy sauce, thick soy sauce and 3 tbsp water, then warm briefly in the frying pan or microwave.

Pour the sauce over the tofu. Top with the crispy shallots and spring onions, and serve.

To make a balanced meal: Serve with 200g steamed tenderstem broccoli, 150g cooked frozen edamame and ½ x 250g pouch cooked brown rice, shared between 2. The broccoli and edamame can steam alongside the tofu.

Storage information
Best eaten fresh. Store leftover tofu (without the shallots) in the fridge for up to 1 day. Keep any leftover shallots in an airtight container at room temperature for up to 2 days. Not suitable for freezing.
Tip
Lower carb: Skip the rice and serve with just the broccoli and edamame. Air fryer shallots: Toss the shallots with the oil and cook at 160c (8–10 minutes), shaking every 2–3 minutes, until golden and crisp.
