Savoy Cabbage Wraps Three Ways

Crisp, pliable Savoy cabbage leaves spread with a creamy chickpea hummus and wrapped around your favourite fillings. Choose classic ham and cheese, zesty tuna and sweetcorn, or vegan smoked tofu and rainbow veg. They're a fresh, crunchy alternative to a sandwich, packed with protein and fibre to keep you full, with fewer carbohydrates than bread.

Ingredients

Base (for every wrap)

  • 2 large Savoy cabbage leaves
  • 2 tbsp reduced-fat hummus
  • 60g tinned chickpeas, drained and rinsed (about ¼ of a 400g tin)

Option 1: Ham, cheese and tomato

  • 3 slices lean reduced-salt ham (or turkey ham)
  • 20g reduced-fat cheddar, grated or sliced
  • 1 tomato, sliced
  • ½ carrot, grated
  • 1 tsp hot sauce (optional)

Option 2: Tuna and sweetcorn

  • 1 x 145g tin tuna in spring water, drained
  • 1 tbsp 0% fat Greek yoghurt
  • Squeeze of lemon juice and a pinch of black pepper
  • 40g tinned or frozen sweetcorn (no added salt or sugar)
  • 5cm piece of cucumber, cut into thin sticks
  • 2 thin slices red onion

Option 3: Smoked tofu and rainbow veg (vegan)

  • 50g smoked tofu, thinly sliced
  • ½ red pepper, cut into thin strips (or frozen sliced peppers, defrosted)
  • ½ carrot, grated
  • Small handful spinach (about 20g)
  • 1 tsp sriracha or a squeeze of lime juice

Instructions

1.

Cut out the thick central stem from each cabbage leaf in a narrow V-shape. Place the leaves in a heatproof bowl and pour over boiling water from the kettle to cover. Leave for 1 minute to soften, then drain, rinse under cold water and pat dry.

Lightly mash the chickpeas into the hummus with a fork.

For the tuna option, mix the tuna with the yoghurt, lemon juice and pepper.

Lay the leaves out flat, overlapping the cut edges slightly, and spread over the chickpea hummus.

Layer on your chosen filling.

Fold in the sides and roll up tightly. Wrap in baking paper or secure with a cocktail stick, and cut in half.

Storage information

Best eaten fresh. For a packed lunch, wrap tightly in baking paper and keep in the fridge for up to 1 day. Not suitable for freezing.

Tip

Raw option: Skip the boiling water for a crunchier wrap. Just shave down the thick stem so the leaf rolls easily.
