Heat the oven to 220°C (200°C fan) and line a baking tray with baking paper.

Toss the broccoli with the oil and pepper, and spread out on the tray.

Roast until tender with crispy, charred edges (18–20 minutes).

Meanwhile, whisk all the dressing ingredients together until smooth, saving a little Parmesan.

Drizzle the dressing over the broccoli, or serve it on the side, and finish with the remaining Parmesan.

Air-fryer option: Air-fry the broccoli at 200°C, shaking halfway, until charred at the edges (8–10 minutes).

Storage information
Best eaten fresh. Leftover broccoli can be covered and refrigerated for up to 2 days, then reheated until steaming. Keep the dressing covered in the fridge for up to 3 days. Not suitable for freezing.
Tip
Lower fat: Use 1 tsp oil instead of 2.
