Red Pepper Salmon

Tender salmon roasted with garlicky butter beans and tenderstem broccoli, served with a silky, sweet roasted red pepper and lemon sauce. Salmon is rich in omega-3 fats and protein, and the beans, broccoli and pepper sauce add plenty of fibre and 3 of your 5-a-day.

Ingredients
  • 3 red peppers, deseeded and sliced (or 480g frozen sliced peppers)
  • 2 x 400g tins butter beans, drained and rinsed
  • 2 garlic cloves, peeled and left whole
  • 1 tsp extra virgin olive oil
  • 200g tenderstem broccoli or broccoli florets (fresh or frozen)
  • 4 salmon fillets (around 480g), fresh or frozen and defrosted, or a 500g half side of salmon
  • 1 lemon, halved
  • Pinch of salt
  • ¼ tsp black pepper

A hand blender or jug blender for the sauce.

Instructions

Heat the oven to 200°C (180°C fan).

Put the peppers and garlic on one side of a large roasting tray and the butter beans on the other. Toss everything with the oil, salt and half the black pepper. Roast until the peppers are soft (15 minutes).

Lift the peppers and garlic into a jug or blender. Add the broccoli to the tray and lay the salmon on top, skin-side down. Squeeze half the lemon over the salmon, season with the remaining pepper, and return the tray to the oven.

Roast until the salmon is opaque and flakes easily (12–15 minutes). A half side of salmon needs 18–20 minutes.

Meanwhile, add the juice of the remaining lemon half and 2 tbsp water to the peppers and garlic. Blend until smooth. Let the steam escape before blending, as the peppers will be hot, and add 1 more tbsp water if the sauce is too thick.

Serve the salmon with the beans and broccoli, with the red pepper sauce spooned over.

Storage information

Cool within 2 hours, then cover and refrigerate for up to 1 day. Cold leftover salmon is lovely flaked into salads, or you can reheat gently until steaming hot all the way through. Not suitable for freezing once cooked.

Tip

Make ahead: The pepper sauce keeps in the fridge for up to 3 days and also freezes well for up to 3 months. It's lovely stirred through pasta or spooned over chicken.
