This is a healthier take on the American Philly cheesesteak sandwich which is utterly delicious! Instead of bread, we are using the peppers as cups to stuff our cheesesteak inside.

Preheat your oven to 170°C.

Place your peppers in a baking dish and cook for 30 minutes.

In a large frying pan, heat 2 tsp of olive oil over medium high heat. Add onions and garlic to pan and cook for a couple minutes.

Season the steak with the italian herbs and pepper to taste, and then add to the pan.

Cook until browned and cooked through (around 4-5 minutes).

Remove the peppers from the oven. Add a slice of cheese to the bottom of the peppers, fill the peppers with the steak mixture, and then add another slice of cheese on top.

Place back in oven for about 3 minutes under the grill setting to brown on top.

Garnish with parsley and serve.

Tip
For lower fat, use a lean cut of beef (like flank, sirloin, or rump steak) trimmed of fat and a non-stick pan to reduce any extra oil needed to avoid sticking. Pair with brown rice for a balanced plate, or cauliflower rice to keep it low carbohydrate friendly.
