Chunks of paneer and colourful veg in a tangy, spiced yoghurt marinade, roasted until charred and smoky at the edges. It's a restaurant favourite you can easily make at home, and perfect for sharing!
8 skewers. If you're using wooden ones, soak them in water for 20 minutes first so they don't burn.

Heat the oven to 220°C (200°C fan) and line a baking tray with baking paper.

In a large bowl, mix the yoghurt, garlic and ginger paste, oil, lemon juice, fresh herbs, all the spices and the salt.

Add the paneer and vegetables and toss gently to coat. Leave to marinate for 15 minutes, or up to overnight in the fridge.

Thread the paneer and vegetables onto the skewers, alternating them, and lay them on the tray.

Roast for 15–20 minutes, turning halfway, until golden and charred at the edges. For extra char, finish under a hot grill for 2–3 minutes.

Storage information
Leftovers can be cooled, covered and refrigerated for up to 2 days, then reheated in a hot oven for 8–10 minutes until piping hot.
Tip
As a main meal: Serve it to 4 with a chickpea kachumber salad made from a drained 400g tin of chickpeas, ½ diced cucumber, 2 diced tomatoes and a squeeze of lemon juice.
