Minced turkey hash

The easiest meal to throw together with all the autumn flavours!

Ingredients
  • 200g brussel sprouts, quartered
  • 250g butternut squash, chopped into 1inch cubes 
  • 2 tbsp olive oil
  • 500g minced turkey 
  • Salt and pepper 
  • 1.5 tsp garlic powder 
  • 1/2 tsp paprika 
  • 2-4 eggs

Instructions

Preheat the oven to 200c.

Toss the sprouts and squash in 1 tbsp olive oil and some salt. Then roast for 20 mins.

Take a large oven proof pan and heat on medium high.

Add 1 tbsp olive oil and once hot, add the turkey mince, salt, pepper, garlic powder and paprika.

5.

Break up the mince with a wooden spoon and stir to combine with the spices.

6.

Once the turkey is browned (about 4 mins), add in the roasted squash and spouts. Toss to combine.

Make little wells in the turkey mixture and crack the eggs into them.

8.

Turn the oven down to 180c and place the dish in the oven for about 10 mins (longer depending how cooked you like your egg).
