Minced Beef “Steaks” in Mushroom Gravy

This is a healthier version of “Salisbury Steaks” which is an American dish using minced beef to imitate steaks with a rich sauce.

Ingredients

"Steaks"

  • 500g 5% fat beef mince
  • 1 egg
  • 2 tbsp ground flaxseeds (linseeds)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ¼ tsp black pepper
  • 1 tsp dried Italian herbs
  • 1 tsp tomato purée
  • 3 tsp Dijon mustard (half for the steaks, half for the gravy)
  • 3 tsp Worcestershire sauce (1 tsp for the steaks, 2 tsp for the gravy)
  • 1 tbsp extra virgin olive oil

Gravy

  • 1 onion, diced
  • 250g mushrooms, sliced
  • 3 garlic cloves, crushed
  • 350ml reduced-salt beef stock (made with a low-salt stock cube)
  • 1 tbsp cornflour
  • Chopped fresh parsley, to serve

Mash and greens

  • 400g potatoes, peeled and cut into chunks
  • 400g cauliflower, cut into florets (fresh or frozen)
  • 400g green beans, trimmed (fresh or frozen)

Instructions

Mix the mince, egg, flaxseeds, onion powder, garlic powder, pepper, herbs, tomato purée and the steak portions of Dijon and Worcestershire sauce. Shape into 8 oval patties, around 1.5cm thick.

Put the potatoes and cauliflower in the saucepan, cover with water and bring to the boil. Simmer until tender (15 minutes), adding the green beans for the last 4 minutes.

Meanwhile, heat half the oil in the frying pan over a medium-high heat. Brown the patties (3 minutes each side), then transfer to a plate. They will finish cooking in the gravy.

Add the remaining oil and the onion to the pan, and cook until soft (4–5 minutes). Add the mushrooms and cook until golden (5 minutes). Stir in the garlic for 1 minute.

Mix the cornflour with 2 tbsp cold water. Add the stock, the remaining Dijon and Worcestershire sauce, and the cornflour mixture to the pan. Stir until it comes to the boil and thickens.

Return the patties to the pan. Cover and simmer until cooked through with no pink meat in the centre (8–10 minutes). If you have a thermometer, it should read 75c.

Lift the green beans out of the saucepan, then drain the potatoes and cauliflower. Mash with a splash of the cooking water and some black pepper.

Scatter the steaks with parsley and serve with the mash and green beans.

Make ahead: Shape the patties up to 24 hours ahead and keep them covered in the fridge.

Storage information

Leave to cool, then cover and refrigerate for up to 3 days. Reheat until piping hot all the way through. Freeze the steaks in gravy, and the mash, for up to 3 months; defrost overnight in the fridge and reheat until piping hot.

Tip

Lower carb: Use all cauliflower in the mash instead of potatoes.
