Mexican Chili Soup

A hearty, smoky soup packed with tender shredded chicken, kidney beans and a rainbow of vegetables in a gently spiced tomato broth. Everything goes into one pot, so it's perfect for batch cooking. It's high in protein and fibre to keep you full, and every bowl provides 5 of your 5-a-day.

Ingredients

  • 4 chicken breasts (around 600g or 400g tin of black beans) 
  • 1 onion, diced (or 150g frozen chopped onion)
  • 2 courgettes, sliced
  • 3 peppers, sliced (or 480g frozen sliced peppers)
  • 100g broccoli florets (fresh or frozen)
  • 100g cauliflower florets (fresh or frozen)
  • 2 x 400g tins chopped tomatoes
  • 2 x 400g tins kidney beans, drained and rinsed
  • 1 reduced-salt chicken or vegetable stock cube
  • 2 tbsp mild chilli powder
  • 1 tbsp ground cumin
  • 2 tsp paprika
  • 2 tsp garlic granules
  • 1 tsp dried mixed herbs
  • ¼ tsp black pepper

Toppings (optional)

  • 6 tbsp 0% fat Greek yoghurt (1 tbsp per bowl - or plain soya yoghurt) 
  • 1½ avocados, diced (¼ per bowl)

Instructions

1.

Put all the soup ingredients except the chicken and stock cube into a large saucepan, and stir to mix the spices through.

Nestle the whole chicken breasts into the vegetables. Crumble in the stock cube and pour over 1 litre boiling water, or enough to just cover everything.

Bring to the boil, then cover and simmer until the chicken is cooked through with no pink meat (25 minutes).

Lift out the chicken and shred it with two forks. Return it to the pan and simmer for 5 minutes more.

Serve in bowls, with yoghurt and avocado on top if you like.

Slow cooker option: Put everything into a slow cooker with 800ml boiling water and cook on low for 6 hours or high for 3–4 hours. Shred the chicken before serving.

Storage information

  • Cool within 2 hours, then cover and refrigerate for up to 3 days. Freeze in portions, without the toppings, for up to 3 months. Defrost overnight in the fridge and reheat until steaming hot all the way through.

Tip

Family-friendly: Mild chilli powder keeps it gentle. Serve chilli flakes or hot sauce at the table for those who like more heat.
