Mexican burrito one pot

A one pot easy dinner that was an absolute hit in our household! You can easily make changes to suit your preferences and dietary pathway.

Ingredients
  • 1 tbsp olive oil
  • 500g minced beef
  • 2 bell peppers, diced
  • 1 zucchini, diced 
  • 1/2 tbsp cumin
  • 1 tsp paprika 
  • 1 tsp mild curry powder 
  • Salt and pepper
  • 1/2 cup rice 
  • 1 can chopped tomatoes 
  • 1 can full of water 
  • 50g shredded cheese

Instructions

1.

Heat olive oil in a large pan over medium high heat.

Add the beef, breaking it up with a wooden spoon, and cook until browned.

Add in the peppers, zucchini and spices. Cook, stirring occasionally to avoid sticking.

Add the rice and cook for a minute or so. Then add the chopped tomatoes and water and stir to combine.

Bring to a boil and then reduce to a simmer and add a lid. Simmer for about 15 minutes.

Preheat oven to a grill setting.

Remove the lid, sprinkle the cheese all over and then place under a grill for about 5 minutes.

Tip

For low carb: Remove rice or substitute for quinoa. For low fat: remove or reduce cheese quantity and use low fat. You can also substitute beef for chicken or turkey.
